French Meatloaf

I have always liked Pâté. As a Jewish boy in Pittsburgh I discovered chopped liver which is really nothing more than liver Pâté but made with rendered chicken fat or schmaltz. In Europe I discovered terrine. People said it’s just another word for Pâté but no its not. Both are served cold or at room temperature but they are different.

Pâté is spreadable and usually spread on bread or crackers. Terrine is like cold meatloaf and can be eaten with a knife and fork. Both are usually served as appetizers but also found for lunch and as part of a dinner. It can be made from really anything and you can find vegetable terrines as well as meat varieties. One of my favorites.

My Stupid Soup Rule

So for a long time I have held the position that soups and stews were only for the cold weather moments. I never had soup in the summer. The last time we were in Paris was the summer of 2009 and of course my wife, being smarter than me ordered the onion soup. All onion soup in France is French Onion Soup. I had a lovely shrimp and avocado dish but when I saw her Onion Soup I knew I had made a mistake.

Next time in France I will order the Onion Soup even if I am wearing shorts!

Pork Enchilada in Mole Sauce

There are many great restaurants in Cancún Mexico. However one stands out in my memory from my last visit and I can’t wait to return. Julia Mia not only has incredible food and service but they will pick you up at your hotel and take you to the restaurant in the heart of Cancún and return you safe and sound at the end of your feast.

This was a dish from one of The Prix Fixe menus. A fried pork enchilada in Mole sauce.

This Snow is On Me

Okay, yesterday I published Thinking of Mexico. Today we had our first snowfall in Pittsburgh and a little more than expected. So if you were stuck in traffic or fell on the ice…my bad. To make up for It I will share a winter picture from a few years ago. Hopefully, this will bring warmer weather?

Moment and Souls Opens Tomorrow

Moments and Souls opens tomorrow at the Percolate Art Space and Gallery located at 317 S. Trenton Avenue, Pittsburgh, PA 15221. The exhibition runs from November 8, 2017 through December 2nd. The opening reception will be held on Saturday, November 11th from 6 – 8:30 p.m. at the gallery

Moments and Souls features the work of Richard Burke and Dale Schmitt. The two met as teacher and student at the Ivy School of Professional Art. Both are eclectic photographers, but the show focuses on their passion for photographing people. They approach their work of capturing people in very different ways.

Richard’s inspiration has often come the work of Henri Cartier-Bresson, who defined the concept of the decisive photographic moment. Richard uses a technique of taking pictures without looking through the viewfinder to get more honest expressions.

Dale’s inspiration has come from the revealing portraits of Yousuf Karsh. Dale’s portraits capture a person’s soul. These photographs show both the carefully crafted and deliberate portrait style of Karsh and the split second timing of a life moment àla Bresson.

Global Warming Cactus

We have had this Cactus for at least ten years. It use to bloom every December like clockwork. You know when it use to snow in December. Last few years it began to bloom around Thanksgiving. This year is the first year in bloomed in October. I figure if global warming continues it will soon be a Memorial Day Cactus.

Mountain Wetlands

Maple Swamp located in the Delaware National Forest of Pennsylvania is labeled a swamp on the maps. However, people who live in or near swamps prefer to cal them wetlands . In all four seasons they look different. I think they provide beautiful scenes in the autumn.

Pittsburgh Autumn

Pittsburgh is a city of hills and trees. The hills create the diverse neighborhoods that make up Pittsburgh’s blend of ethnic cultures from Germantown to Polish Hill. The trees are a wonderful blend of hardwood trees that make for amazing parks and spectacular fall colors. This view of downtown from Schenley Oval.

Finally, Autumn has arrived although the show from nature may not be as great this year because of the warm and dry weather. Searching the archives I found this. Taken a block from our old house in the Delaware National Forrest. The Pocono mountains are exquisite this time of year.
